In this handsomely designed book, more than 250 recipes for vegetarian, often vegan food from Japan are presented by Nancy Singleton Hachisu, an American who has lived in the country since 1988. But seriously, reading this (and cooking from it in the past months at least once a week) has proven to be itself a cooking class with Andoh. Symbols denote which are vegan, dairy-free, or nut-free, and the recipes names also appear in Japanese characters as well as transliterated. However, like her other books, this one is not for the weeknight cook; most of the ingredients are are difficult to come by, and the techniques are time-consuming and specialized.

Recipes are divided by cooking style: dressed, vinegared, simmered, steamed, stir - fried, grilled, pickled, sweet and my particular favourite, deep - fried. I loved this book--as a cookbook I did not read it cover to cover, but the whole introduction, list of ingredients, and cooked various recipes in the book. TL;DR: Japan: The Vegetarian Cookbook is another very solid geographic-based cookbook in Phaidon’s powerful lineup. And although I had a little mishap with one of the recipes, I think Vegan Japaneasy is a nice cookbook overall.
